If, like us, you are not an expert in making cakes and sometimes something goes wrong, this recipe is just for you. Matcha Crepe Cake / Matcha Crepe Cake is a proposition for those who value simple and quick cake solutions with an additional WOW effect. This cake has 2 basic elements: matcha pancakes and matcha cream. Prepare both separately, then interlace them. Spread 2 tablespoons of cream on the pancake, cover with another pancake and repeat this step until the cake is built. Spread the remaining cream on top and decorate with chopped pistachios and raspberries.

Ingredients:

Matcha pancakes (20 pieces):
300 g of wheat flour
4 eggs
600 ml of milk
100 ml of carbonated water
5 tablespoons melted butter
3 tablespoons matcha.bros
2 teaspoons of cane sugar
pinch of salt

Matcha cream:
4 eggs
500 g mascaprone
150 g of powdered sugar
2 tablespoons @matcha.bros

Preparation:

Pancakes:

1. Pour the flour into a bowl, add eggs, matcha, salt and sugar.
2. Pour the milk and carbonated water and mix the dough, getting rid of any lumps. You can mix them with a blender.
3. Finally, pour in the melted butter and mix again. The dough should not be too thick or too runny. Put it in the fridge for 30 minutes or fry it straight away.
4. Heat the pan over medium heat and rub it with a little butter. Pour a ladle of dough and fry the pancakes for about 2 minutes on each side. Drain the fat using a paper towel.

Cream:

1. Beat the egg whites until stiff. Grind the yolks with powdered sugar and matcha until smooth.
2. Gradually add the mascarpone and mix the mixture. Finally, add stiffly beaten egg whites and gently mix the mass.
