Forest Matcha Moss - cake
Ingredients:
Cake:
- 300 g fresh spinach + 4 tablespoons of rapeseed oil
- 3 eggs
- 200 g of sugar
- 250 ml rapeseed oil
- 2 teaspoons @ matcha.bros
- 450 g of wheat flour
- 2 spoons of baking powder
Cream:
- 200 ml whipping cream 30%
- 200 g mascarpone
- 3 tablespoons of powdered sugar
- 2 teaspoons @matcha.bros
Top:
- favorite fruit
Preparation:
- Wash the wet spinach and add it to the pan, heat for 2 minutes until soft. Cool, add 4 tablespoons of oil and mix until smooth.
- Beat the eggs with sugar with a mixer until fluffy. Gradually add matcha and pour in a thin stream of oil, mixing all the time.
- Then, while mixing, add the spinach mass.
- Finally, add the flour and baking powder and mix briefly.
- Line the cake tin with baking paper. Pour the dough and level the top. Bake the cake for about 35 minutes at 180 degrees. Cool on a rack.
- Whip the cream until it becomes whipped cream. Add mascarpone, sugar and matcha to the spoon. Mix until the ingredients are thoroughly combined.
- Cut the dough in half lengthwise. Crumble or mix one part until crumbs are obtained.
- Spread the cream on the bottom, sprinkle with crumbs and decorate with fruit.
