Forest Matcha Moss - cake

Ingredients:

Cake:

  • 300 g fresh spinach + 4 tablespoons of rapeseed oil
  • 3 eggs
  • 200 g of sugar
  • 250 ml rapeseed oil
  • 2 teaspoons @ matcha.bros
  • 450 g of wheat flour
  • 2 spoons of baking powder

Cream:

  • 200 ml whipping cream 30%
  • 200 g mascarpone
  • 3 tablespoons of powdered sugar
  • 2 teaspoons @matcha.bros

Top:

  • favorite fruit

Matcha forest moss cake

Preparation:

  1. Wash the wet spinach and add it to the pan, heat for 2 minutes until soft. Cool, add 4 tablespoons of oil and mix until smooth.
  2. Beat the eggs with sugar with a mixer until fluffy. Gradually add matcha and pour in a thin stream of oil, mixing all the time.
  3. Then, while mixing, add the spinach mass.
  4. Finally, add the flour and baking powder and mix briefly.
  5. Line the cake tin with baking paper. Pour the dough and level the top. Bake the cake for about 35 minutes at 180 degrees. Cool on a rack.
  6. Whip the cream until it becomes whipped cream. Add mascarpone, sugar and matcha to the spoon. Mix until the ingredients are thoroughly combined.
  7. Cut the dough in half lengthwise. Crumble or mix one part until crumbs are obtained.
  8. Spread the cream on the bottom, sprinkle with crumbs and decorate with fruit.
